Fresh Strawberry Pie Recipe
One 9" pie

INGREDIENTS

4 c. fresh strawberries cut in quarters, lengthwise
3/4 c. chopped fresh strawberries
1 1/3 c. apple juice concentrate
1 tsp. vanilla
pinch of salt
6 T. cornstarch

Wash and stem 3 pints of strawberries. Cut 4 cups of berries lengthwise into  quarters and set aside.  Chop another ¾ c. of berries and put into blender.  Add remaining ingredients and blend  on high for 15-20 seconds.  Pour into saucepan.  Cook on medium-high, stirring constantly until thick. Remove from heat and gently fold in berries with a rubber spatula. Place in a baked pie shell and shape. Chill and serve.

Try this crust for your fresh Strawberry Pie

1 ½ c. Granola
2 tbsp. oil (or water)
Pinch of salt

Grind granola in a blender.  Put granola in a bowl and add all ingredients.  Sprinkle with more water if needed to moisten. Mix with a fork, adding a little more water if necessary. Press into the pie plate.  Bake at 350º for 10-15 minutes, or until firm.  Use ONLY with pre-cooked fillings.
